Ingredients(makes about 10-12)
3 medium Potatoes -Boiled and peeled
1 medium onion - chopped
5-6 twigs of cilantro
1 green chilli
3-4 dried bread pieces - soaked; alternatively about a cup of breadcrumbs or 2-3 tbsp of cornflour (this is for binding the potatoes; ifyou find the cutlets breaking while frying them, you need to add moreof whatever ingredient you are using for binding)
salt to taste
red chilli (cayene works well) to taste
dried mango powder(commonly called amchoor in Hindi) - 1 tbsp (this lends a tangy flavor, lemon juice would work as well in my opinion)
Method
Mash the potatoes and mix all the ingredients well. Shape them intopatties and deep fry them in a wok/deep frier. Make sure the oil isvery hot, otherwise the patties tend to break.(Put a small patty inthe oil first to check). Serve hot with ketchup as it is or put inbread/bun with fresh chopped onions, tomatoes, cucumber and cheese.
Variations
- Add veggies like grated carrot, boiled peas, corn, green beans tothe potato mixture to make vegetable cutlets.
- Use cookie cutters for patties of various interesting shapes.
- For a low cal version of the above, shallow fry in a non stick panusing cooking oil spray or even bake in the oven with no oil at all.
